Australian-designed world-first knife sharpener
The engineers and chefs at Füritechnics, the Australian company that developed the world-acclaimed Füri professional knife range, have just announced another world first.
The invention is called Diamond Fingers, and it is the first device ever to create true professional cutting edges on knives, with no skill required. Unlike other draw-through devices that create an adequateedge, the Diamond Fingerssharpener creates a cutting edge exactly like that produced by the diamond-coated Steels that professionals now use.
Our extensive research over the years has included university wear testing of cutting edges and observation of their performance under a scanning electron microscope. This enabled us to develop the best diamond-coated Steels on the market. These are great for any highly skilled chef, but can be a disaster for regular home cooks, says the inventor of Diamond Fingers, and Füritechnics Managing Director, Mark Henry.
From our observation of thousands of home cooks and chefs over the years at our trade shows, and in working kitchens, we know that very few people are confident at maintaining sharp edges on their professional knives. Everyone has a drawer full of beautiful knives that are blunt!
The main problem with regular honing on a Steel, even a diamond-coated one, is that the blade is rarely at the correct angle to the Steel, or wobbles during the process, creating edges that are not well shaped. Because it is so difficult to create accurate cutting edges with a Steel, Mark set out to find a way to create more accurate edges, without the need for special skills.
In effect, the Diamond Fingers sharpener is six spring-loaded diamond-coated Steels attached to a comfortable handle. The specially curved fingers are designed to automatically set the cutting edge angles. Simply pull the blade down and back through the fingers.
Our Füri knives and other innovations for chefs are distributed across the US, Europe and Asia-Pacific, and now we expect Diamond Fingers to quickly become one of our most popular products. Everyone who sees it in action wants one on the spot! It took four years for our Füri-pro knives to become the leading brand in Australia, but we think that Diamond Fingers will be in most cooks kitchens within a couple of years.
