How did an Australian Engineer develop a knife that many consider to be a revolutionary step forward in professional knife design?
Ten years ago, a Brisbane engineer and keen home cook, Mark Henry, started to think seriously about the knives in his kitchen. The more he thought about knives, the more his collection of various (leading) European brands began to seem pretty ordinary. Some had split or melted handles, others had loose or missing rivets, and all were difficult to keep clean (with food caught in the handle seams). Why are the expensive knives so fragile, and unhygienic?he thought.
He also noticed the difference between ease of sharpening (and good edge retention) of his old carbon steel knives, and the newer vanadium stainless steel knives. Wouldn't it be great if I could combine the ease of sharpening and edge-holding ability of the old carbon steel knives with the stain resistance of the others?, he also thought. The more he talked to Chefs about these issues, the more it seemed like they needed solving: everyone was having to deal with the same problems!
Another thing he noticed was that many older Chefs had arthritis, or at least sore hands from various chronic strain-related injuries. Is this just unavoidable repetitive strain, or are the handle shapes contributing to the problem?he thought.
Six years and lots of hard work later, he believed that he had solved all these problems, that he was the first to do so, and that it was time to show the world! Another four years (now) saw his knives rising in popularity in Australia, the USA, UK, France, Italy, New Zealand, and Singapore. Yes, we still have a long way to go before it is common knowledge that the Füri knife performs better. The old European brands are very strongly held in the minds, and hearts, of the older Chefs. But, large numbers of Chefs are more interested in the performance of their tools, and this is where Füri knives are superior.
