While living and working in Asia we were fortunate to be exposed to a great many culinary customs and traditions although  the Chinese New Year celebration is, we believe, the most tremendous celebration of food and family.  The Kitchen Gods are worshiped and a great many significant foods are consumed throughout the holiday.  It is with out a doubt the most celebrated holiday among the Chinese Culture and we we felt honored to be a part of this experience.  Now that we reside back in the US we continue to celebrate this joyous event each year with our families and friends.

Deviled Eggs with Caviar

Joe's smoked Golden Lion prime rib of beef

Smoked Salmon with Capers

Roast Ham with Mustard Ring

 

Recipe

Mustard Ring

4 eggs, well beaten (room temp)

3/4 c. sugar

1 T. Coleman's Dry Mustard

1 Envelope Knox Gelatin dissolved in 1/4 cup hot water

1 C. cider vinegar

1 tsp. salt

1 C. whipping cream

Combine all ingredients in top of double boiler on med. heat.  Add eggs, vinegar, and gelatin.  Stir until thick & remove from heat.  Place mixture in larger container w/ice water to cool.  Meanwhile, in another bowl beat whipping cream to thick but not peaked or dry.  Fold into cool mustard mixture.  Lightly grease aspic pan or other mold and fill with mixture.  Cover & refrigerate to firm.  To serve, place mold in shallow warm water to loosen.  Place plate over top & flip over.  Garnish with watercress and serve with roast ham.
